Novecento59 is a sparkling wine produced from the harvest of Chardonnay grapes lovingly cultivated in the Alghero area. This wine celebrates the people who made the Santa Maria La Palma winery great, founded in 1959. Produced in limited edition.

ORIGIN
Vineyards cultivated using the Guyot pruning system on granitic disintegration soils in Oliena and surrounding areas (NU).
PROCESSING
The delivery of the grapes, harvested after mid-August, takes place after careful selection. Pressing is soft and delicate, and the first fermentation occurs at 13 degrees to preserve the aromatic profile. The second fermentation takes place in the bottle following the classic method with a long aging on the lees, which in our case lasts 18 months.
CHARACTERISTICS
Colour: Pale yellow with greenish hues.
Aroma: Floral and fruity with white peach and hints of bread crust.
Taste: Fresh, with a light saline note and a clean yet full finish. Fine and persistent perlage.
PAIRINGS
Excellent as an aperitif, it sublimely accompanies oyster, shrimp, and scampi crudités.
