ORIGIN
Vineyards owned by the winery, trained as saplings on clay-limestone soils, in the "Benatzu Coloru" area in Serdiana (SU).
PROCESSING
Manual harvest of the grapes, which once arrived in the cellar are subjected to destemming-crushing and maceration of the skins in the must for five days at a controlled temperature of 20°C, in stainless steel containers. At the same time, by inoculating selected yeasts, alcoholic fermentation takes place. Oltreluna is then clarified and maturation continues for about six months in cement tanks placed underground, before the final refinement in the bottle for three months.
CHARACTERISTICS
Color: Intense ruby with a slightly purple edge, very clear.
Aroma: Intense and persistent, vegetal and spicy notes from which a light nuance of liquorice emerges.
Taste: dry and soft, pleasantly fresh, balanced and harmonious with good olfactory persistence.
COMBINATIONS
Oltreluna is a red wine perfect for drinking as an aperitif, accompanying cured meats and sausages, medium-aged cheeses. At the table it can be paired with soups and broths, pan-fried white meats and grilled meats, ideal with a typical Sardinian dish such as spit-roasted suckling pig flavored with myrtle leaves.
