Vineyards grown on granite weathering soils grown in the Mandrolisai lands
PROCESSING
The grapes are harvested manually in the first ten days of October. Once they arrive in the cellar they are subjected to maceration with the pomace, with frequent daily pumping over. This is then followed by aging for six months in oak barrels.
CHARACTERISTICS
Color: intense red with purple reflections.
Perfume: intense and complex, with fruity hints.
Taste: full, fresh and with great structure.
COMBINATIONS
Bovale Omphalos goes well with land-based appetizers and structured first courses. Ideal with game such as stewed wild boar, red meats in general and mature cheeses.
