Pariglia owes its name to the group performances that take place during the Sartiglia, the equestrian joust of the Oristano carnival.
GRAPES Vermentino

ORIGIN
Vineyards grown with espalier system, Guyot pruning and spurred cordon, on volcanic soils, rich in obsidian, at the foot of Monte Arci, Oristano.
PROCESSING
Manual harvest of the grapes, which once arrived in the cellar are subjected to soft pressing, in order to obtain the best possible free-run must: this is led to alcoholic fermentation in stainless steel tanks at a controlled temperature. Pariglia then ages in steel and vitrified cement for a few months, before the final refinement in the bottle.
CHARACTERISTICS
Color: straw yellow with greenish reflections.
Aroma: intense, soft, fruity with white pulp fruit, white flowers and pleasant mineral hints.
Taste: fresh, savoury, delicate and fine.
COMBINATIONS
Pariglia is a white wine that pairs well as an aperitif with cold cuts and not too mature cheeses. Also ideal with appetizers and traditional Sardinian seafood dishes.
