PROCESSING AND AGING
Cold maceration of the crushed grapes for 12 hours and subsequent soft pressing. The free-run must is cold-decanted and the fraction cleaned and sent to fermentation conducted by selected yeasts at a temperature of 12 ° C. It is a wine that offers its best potential from three years after the harvest and that maintains its organoleptic qualities for many years.
Color: intense golden yellow tending to amber.
Bouquet: full, complex and aromatic. It expresses a bouquet of dried acacia flowers, apricot jam, candied citrus fruits and sweet vanilla and spicy notes on the finish.
Taste: silky fluidity, soft, sumptuous and full-bodied. Good flavor that balances the sweet sensations, and offers a very long finish of dried fruit, apricot, small toasted fruits and delicate spices.
Perfect in combination with blue and aged cheeses, it can be well combined with spicy dry pastries.
