ORIGIN
Vineyards of the winery's contributing members, located on the limestone and marly plains of the Dolianova area (CA).
PROCESSING
Cold maceration of the crushed grapes for 12 hours and subsequent soft pressing. The free-run must is cold-decanted and the cleaned fraction is sent for fermentation conducted by selected yeasts at a temperature of 12°C.
It is a wine that offers its best potential starting from three years after the harvest and that maintains its organoleptic qualities for many years.
CHARACTERISTICS
Colour: intense golden yellow tending towards amber.
Bouquet: broad, complex and aromatic. It expresses a bouquet of dried acacia flowers, apricot jam, candied citrus fruits and sweet vanilla and spicy notes on the finish.
Taste: silky fluidity, soft, sumptuous and full-bodied. Good flavor that balances the sweet sensations, and offers a very long finish of dried fruit, apricot, small toasted fruits and delicate spices.
COMBINATIONS
Perfect when paired with blue and mature cheeses, it pairs well with spicy dry pastries.
