ORIGIN
Vineyards owned by the winery, grown using espalier and sapling systems, on calcareous-clayey soils, Tenute Sisini, Serdiana (SU).
PROCESSING
Manual harvest of the grapes, which once arrived in the cellar are subjected to maceration on the skins for about ten days and alcoholic fermentation in stainless steel containers at controlled temperature. Perdera matures in glass-lined cement tanks followed by a brief refinement in the bottle before being put on the market.
CHARACTERISTICS
Color: intense ruby with a typical Monica undertone.
Aroma: vinous, intense, characteristic.
Taste: round, final aftertaste tending almost towards the typical sweetness of the Monica bush vine.
MATCHING
Perdera is a red wine perfect as an aperitif , accompanied by semi-mature cheeses and typical cured meats. At the table it goes well with first and second courses of not too structured land, but also second courses of fish such as grilled tuna and fish soups.
