The name of this wine is a tribute to the heron, symbol of the winery and a recurring presence in the island landscapes. 'perdigiournou' in Ligurian means “heron” and is a playful reference to the fact that herons seem to have nothing else to do during the day than lounge on one leg in the marshes.

ORIGIN
The winery's own vineyards, grown in espalier style on sandy soils on the sunny plains of the island of San Pietro, in Sulcis.
PROCESSING
The grapes are harvested strictly by hand, and once they arrive in the cellar they are subjected to soft pressing and white vinification with a short maceration on the skins. Perdigiournou then ages for 6 months in steel at a controlled temperature to finish in glass before being put on the market.
CHARACTERISTICS
Colour: intense straw yellow, with bright golden reflections.
Aroma: notes of intense yellow flowers such as broom and freesia, fresh summer fruit such as peach and apricot, aromatic herbs such as thyme and intriguing marine memories.
Taste: warm and with good acidity, very savoury, intense and long-lasting.
COMBINATIONS
Perdigiournou is a white wine that pairs well as an aperitif with cured meats, fresh and semi-mature cheeses. At the table it pairs well with sushi and sashimi, with typical dishes such as a slice of lightly seared Carloforte tuna, or with fish-based first courses, spicy and tasty second courses.
