ORIGIN
Vineyards owned by the winery in the Benatzu Coloru area, grown using traditional saplings and low espaliers (Serdiana).
PROCESSING
Rosé vinification of hand-harvested grapes, with partial maceration of the skins for a few minutes followed by cleaning of the must with sedimentation. Fermentation continues at a controlled temperature for two weeks at 16° C in stainless steel tanks. A light filtration precedes bottling of the still young product to preserve aromas and freshness.
CHARACTERISTICS
Colour: bright pink, with cherry reflections.
Aroma: notes of small red fruits, cherry, raspberry, blackberry, with floral hints and a light saline note.
Taste: good freshness, good structure and persistence.
COMBINATIONS
Chiaro di Stelle is an excellent rosé to drink as an aperitif, together with fried seafood and vegetables, land or sea appetizers. Seafood and vegetable risottos, light first courses.
