ORIGIN
Vineyards owned by the winery, trained as saplings and low espaliers, on clayey-calcareous soils, Tanca S'Arai, Serdiana.
PROCESSING
Manual harvest of the grapes, which are transported to the cellar, are subjected to destemming-crushing and maceration on the skins at a controlled temperature, with the addition of selected yeasts for about ten days. The alcoholic fermentation begins after draining in stainless steel containers, at a controlled temperature of 20°C. The different wines that follow separate vinifications, are then assembled and left to mature first in cement tanks and then in French oak barriques, for about ten months, before the final refinement in the bottle for a further four months.
CHARACTERISTICS
Color: ruby red, with reflections tending more towards garnet.
Aroma: intense aromas, in which ripe fruit is accompanied by slightly more almondy notes and spicy hints.
Taste: good body, dry and soft sip, reveals good warmth and a good roundness to the palate.
COMBINATIONS
S'Arai is a red wine with great personality and structure, which requires equally important dishes. At the table it pairs well with second courses of land, feathered game, roast and braised meats, but also mature cheeses and cured meats. Perfect with pizza.
