ORIGIN
Vineyards trained with low espalier on clay-limestone soils rich in skeleton, on medium hills, 150/180 m above sea level, in the “Is Crabilis” area, in the countryside of Ussana (CA).
PROCESSING
The grapes are harvested manually and quickly transported to the cellar. The must obtained from soft pressing, after an initial filtering and the addition of selected yeasts, ferments in stainless steel vats at a controlled temperature of 15°. Once fermentation is complete, after a light clarification, it is left to rest for a few months in steel, before proceeding with bottling.
CHARACTERISTICS
Colour: straw yellow with greenish reflections, brilliant.
Bouquet: intense and persistent with floral and vegetal aromas, lime and balsamic notes.
Taste: warm and full, good depth and balanced; with long tasting persistence.
COMBINATIONS
Perfect accompaniment to seafood dishes in general, especially fish seasoned with light sauces.
