PROCESSING AND AGING
Short skin maceration of the must on the skins. Control of fermentation temperature and use of selected yeasts. The second fermentation is obtained by slow fermentation at a temperature of 13 ° C, through the Charmat Method. Its characteristics are best appreciated within one or two years of its commercialization. Optimal storage conditions are essential.
FEATURES
Color: pale straw yellow, bright and with brilliant reflections. The persistent perlage derives from the Charmat method.
Bouquet: it has delicate aromas of freshly baked bread crust, white fruit and aromatic herbs.
Taste: the gustatory attack is fresh, the aromatic progression is delicate, the finish is pleasant and dry.

It is an excellent aperitif but it can also accompany menus with delicate flavors, from crunchy sauteed and fragrant vegetables with fresh herbs to fish, even raw, to cold rice salads, as long as without pickles or garlic.
