Vineyards grown with espalier on calcareous clay soils located between Sanluri Lunamatrona (SU).
PROCESSING
Soft pressing with a yield of 50% of the free-run must, fermentation at 16-17 °C after decanting the must. Sparkling winemaking takes place through racking into an autoclave and refermentation at a temperature of 16 °C with selected yeasts.
CHARACTERISTICS
Color: Straw yellow with fine and persistent bubbles.
Aroma: elegant fragrance with hints of white flowers and crunchy fruit.
Taste: Full and pleasantly savoury, good creaminess, soft finish.
COMBINATIONS
Su Bri Brut is a sparkling wine that pairs well as an aperitif with fresh and semi-mature cheeses and cured meats with a strong fatty component, shellfish-based dishes, vegetable formats, delicate fish-based second courses and fried foods.
