Soft pressing with 50% yield of free-run must, fermentation at 16-17 °C after decantation of the must. Sparkling wine production occurs through decanting into an autoclave and refermentation at a temperature of 16°C with selected yeasts.
Color: Straw yellow with fine and persistent perlage.
Perfume: elegant fragrance with hints of white flowers and crunchy fruit.
Taste: Full and pleasantly savory, good creaminess, soft finish.
Excellent as an aperitif, with vegetable flans, to try on fried fish.
