Counter-espalier vineyards grown on the slopes around the winery, in the hills bordering the road from Sanluri.
Soft pressing with a 50% yield of free-run must, followed by fermentation at 16-17 °C after decantation of the must. Sparkling wine production which occurs with decanting into an autoclave and refermentation at a temperature of 16°C with selected yeasts.
Colour: cherry pink color and a fine and abundant perlage.
Perfume: hints of red berry fruit, such as wild Sardinian cherries, and fresh flowers such as dog rose.
Taste: fresh, intense and persistent, pleasant pungency of the perlage.
It goes perfectly with cured meat-based appetizers. It is at its best with first courses based on shellfish or tasty fish and seafood soups.
