GRAPES Bovale and Merlot

ORIGIN
Vineyards owned by the winery, grown espalier with spurred cordon pruning on clayey-limestone soils, on the hills between Sanluri and Lunamatrona.
PROCESSING
Grapes harvested by hand and subjected to destemming and crushing. The must macerates on the skins for about ten days, at the same time the alcoholic fermentation takes place, at a controlled temperature, in steel containers. Su 'Oltre then matures for eighteen months partly in oak barriques and partly in tonneaux, and completes its maturation process with six months of refinement in glass before being put on the market.
CHARACTERISTICS
Color: intense ruby red with purple reflections.
Perfume: intense and complex, flowers such as violet, ripe berries such as blueberry and currant, balsamic notes of mint and eucalyptus, spicy vanilla and cocoa.
Taste: in the mouth it is structured and soft, intense and long-lasting, noble and smooth tannin, alcoholic generosity, fine and completely balanced flavour.
COMBINATIONS
Su'Oltre pairs perfectly with structured dishes, first courses with venison ragù, stewed meats such as roast pork and medium-aged cheeses.
