PROCESSING
The winemaking process begins with the harvest and destemming, after which the grapes are pressed. Through natural sedimentation the wine is clarified and cooled. Once this phase is completed the wine is left to mature in glass-lined cement tanks, where it is stored until it is time to referment according to the Charmat method.
CHARACTERISTICS
Color: straw yellow.
Perfume: spicy Mediterranean scrub.
Taste: fresh and savoury, harmonised by a pleasant perlage created by the long period in the autoclave.
COMBINATIONS
Tancarè is a sparkling white wine that is excellent as an aperitif and pairs perfectly with fish, shellfish and seafood dishes, fried foods and fresh and semi-mature cheeses.
