The Corsa Tonno, caught in the Sardinian tuna fisheries of Carloforte and Portoscuso, is entirely processed by hand, just as it was done centuries ago.
Tarantello is the result of a selection of tuna meat, obtained with a knife thanks to the skill of master tuna cutters: it has a balanced dose of lipids that make it more tender, so much so that it falls into the “soft” classification of tuna preserves.
Tarantello appears for the first time at the beginning of the 16th century, on the menu of a lunch in honor of Emperor Charles V, who landed in the city of Taranto with his fleet: hence the name of the product.
Bluefin Tuna (Thunnus Thynnus) is fished in compliance with sustainable catch quotas to preserve resources and certified by ICCAT, EU and Ecorest.
