ORIGIN
Vineyards trained with the spurred cordon system on calcareous soils, Tenute Sella & Mosca, Alghero.
PROCESSING
The vinification of the grapes begins with pre-fermentation maceration at 10°C for 24 hours. This is followed by soft pressing of whole and destemmed grapes; cold static decantation. Fermentation takes place in stainless steel at a controlled temperature of 18°C; 15% of the must ferments in barrique. A part ages in steel on the yeasts for 6 months, 15%
proceeds with refinement in barrique.
CHARACTERISTICS
Color: Deep straw yellow.
Perfume: Mediterranean scrub, thistle and medicinal herbs.
Taste: soft, savory and almost salty in memory of the sea.
COMBINATIONS
Terre Bianche Cuvèe is certainly at its best when combined with hot fish starters, stewed fish, first courses seasoned with fish sauces, fresh cheeses, sushi and sashimi.
