Vineyards trained with the Sardinian pergola and spurred cordon system, Tenute Sella & Mosca - “I Piani” area, Alghero.
PROCESSING
Soft pressing and cold static decantation. Then we proceed with the inoculation of selected yeasts. First fermentation in stainless steel at controlled temperature; followed by foaming (second fermentation) in stainless steel autoclaves for 20 days. Refines on the yeasts, in steel for 3 months.
CHARACTERISTICS
Color: Pale straw yellow with fine perlage
Aroma: Delicate and pleasant, with notes of fruit and white flowers and a subtle minerality
Taste: Very fresh, light, savoury and creamy, pleasantly balanced
COMBINATIONS
Torbato Brut is a sparkling wine that is excellent as an aperitif, while at the table we recommend pizza and fish-based dishes.
