GRAPES Vermentino

ORIGIN
Vineyards grown with espalier and Guyot pruning, on the calcareous-marly soils typical of this area, in the countryside of Serdiana (CA).
PROCESSING
The grapes are harvested in the first days of September. Once transported to the cellar, they are subjected to white vinification, using pneumatic presses, in order to extract the best free-run must from the grapes. The wine matures for six months in steel containers at a controlled temperature, in the presence of the dead yeasts, to improve its structure. Once the maturation is complete, the wine is bottled and refined in glass for a few months before being put on the market.
Suitable for resting in the cellar for up to three years after the harvest.
CHARACTERISTICS
Colour: bright straw yellow with greenish reflections.
Aroma: elegant notes of ripe white-fleshed fruit and white flowers. Hints of minerals and aromatic herbs.
Taste: fine and elegant, with great freshness and minerality.
COMBINATIONS
Antonella Corda's Vermentino is a white wine that is excellent as an aperitif, pairs well with savory appetizers and canapés, and slightly aged cheeses. Perfect at the table with seafood appetizers, first courses such as spaghetti with clams, and simple seafood second courses such as grilled sea bream. A classic with raw seafood, such as oysters.
