ORIGIN
Vineyards owned by the winery, grown on medium-textured soils, mainly clay-limestone.

PROCESSING
Following the manual harvest, the bunches are destemmed and sent to fermentation in steel vats, without temperature management and without the addition of selected yeasts. The must finishes fermentation and is left to macerate on the skins for about a month. The wine then matures on the fine lees, for 12 months in small French oak barrels and concrete barrels. It refines in the bottle for 6 months before being released on the market.

CHARACTERISTICS
Color: straw yellow with golden reflections.
Fragrance: fruit notes such as yellow apple, peach, jasmine and wisteria.
Taste: full-bodied, pleasant acidity and mineral flavor.

COMBINATIONS
Excellent when combined with vegetarian dishes. and fish in sauce. Also good accompaniment to first courses such as risotto or fregola with seafood.
Perfect with fish such as stewed scorpion fish with artichokes and potatoes.
