ORIGIN

Vineyards grown on espalier in the Is Argiolas area, on soils rich in limestone, capacious and clay, between 300 and 350 metres above sea level, Serdiana (SU).

PROCESSING

After the manual harvest, the bunches are destemmed and sent to fermentation. A good part of the must first undergoes cold decantation and then alcoholic fermentation with only indigenous yeasts. A small percentage of the must ferments and ages in small French oak barrels. It ages on the fine lees for a period ranging from 40 to 60 days.

It can evolve well and be consumed up to four years after the harvest.

CHARACTERISTICS

Color: pale straw yellow with greenish hues.

Aroma: intense and persistent of fresh fruit and flowers, with hints of salty and herbaceous notes.

Taste: lively, fresh, savoury, balanced, delicate, fine.

COMBINATIONS

Is Argiolas is a white wine that pairs well with appetizers and fish-based dishes, such as risotto alla marinara, linguine allo scoglio, stewed and grilled fish. It is also excellent with typical Sardinian dishes such as culurgiones with potatoes and mint, risotto with artichokes, white meats and medium-aged cheeses.
