GRAPES Vernaccia

ORIGIN
Alluvial soils, with a sandy loam mix. The centuries-long flow of the Tirso River has created these naturally fertile soils, well-drained by the presence of sand. The soils of the Tirso Valley, characterized by this characteristic, are called "Bennaxi."
PROCESSING
The grapes are hand-picked and vinified as a white wine with flor yeasts and alcoholic fermentation in concrete vats, without temperature control. After about six months, the resulting wine is transferred to oak and chestnut barrels, left to dry, allowing the flor yeast "skin" to form. The wine ages like this for over fifteen years, improving over time in structure, alcohol content, smoothness, and the complexity of its aromas and flavors.
CHARACTERISTICS
Color: amber yellow, with copper reflections.
Aroma: Intense and elegant, with notes of licorice and chestnut honey, quince, nutmeg, and saffron. Hints of nuts.
Taste: dry, smooth, and enveloping. Its alcohol content is moderated by freshness and flavor. The finish is very long.
COMBINATIONS
Vernaccia di Oristano Riserva is an excellent meditation wine, perfect with dry pastries and almond paste desserts.
