GRAPES Vernaccia

ORIGIN
Alluvial soils, with a sandy loam mix. The centuries-long flow of the Tirso River has given rise to these naturally fertile soils, drained by the presence of sand. The soils of the Tirso Valley, thus characterized, are called “Bennaxi”.
PROCESSING
The grapes are hand-picked and vinified in white with flor yeasts and alcoholic fermentation in cement tanks, without controlling the temperature. After about six months the wine obtained is transferred to oak and chestnut barrels left full, so that the 'film' of flor yeasts can form. The wine remains like this for over fifteen years, improving over time the structure, the alcohol content, the softness and the complexity of its perfumes and aromas.
CHARACTERISTICS
Color: amber yellow, with copper reflections.
Aroma: intense and elegant, with liquorice and chestnut honey, quince, nutmeg and saffron. Hints of nuts.
Taste: dry, soft and enveloping. Its alcohol content is moderated by freshness and flavor. A sip of very long persistence.
COMBINATIONS
Vernaccia di Oristano Riserva is an excellent meditation wine, perfect with dry pastries and almond paste desserts.
