In Sardinian, Ziru is a term that indicates the ceramic jars and amphorae used by farmers to store oil and wine, the same amphorae where this wine is left to mature.

ORIGIN
Vineyards grown with espalier and Guyot pruning, on the calcareous-marly soils typical of this area, in the countryside of Serdiana (CA).
PROCESSING
Ziru is obtained from local white grapes, harvested manually in order to select the best bunches. In the cellar, the process continues with alcoholic fermentation and maceration on the skins for about 20 days, followed by aging for 24 months in terracotta amphorae. The wine is filtered before bottling.
Suitable for resting in the cellar for up to three years after the harvest.
CHARACTERISTICS
Colour: straw yellow, with golden reflections.
Aroma: hints of white-fleshed fruits and citrus fruits, floral notes and tones of wild herbs.
Taste: rich, fresh and pleasantly savoury.
COMBINATIONS
Ziru is a white wine that is excellent as an aperitif, and goes well with vegetarian dishes, seafood appetizers, first courses such as seafood risotto, and simple seafood second courses such as grilled sea bream.
