ORIGIN
Vineyards owned by the winery, at about 650 meters above sea level, with an average age of between 50 and 100 years, grown using organic farming methods.
PROCESSING
The manual harvest is followed by alcoholic fermentation, which takes place in cement tanks with only indigenous yeasts. Before bottling, the wine rests for about 10 months in cement tanks before bottling and marketing.
Perfect wine to drink immediately, but can evolve well if left to rest in the cellar for 3-4 years after the harvest.
CHARACTERISTICS
Color: Intense straw yellow, tending towards golden
Aroma: Mineral and Mediterranean, with hints of yellow flowers, ripe white fruit, wild shrubs, aromatic herbs and wet earth
Taste: Rich, warm and intense, concentrated and tasty, long minerality.
COMBINATIONS
It pairs well with both land and sea dishes. We recommend accompanying it with a red fish soup or an excellent mushroom risotto. Also ideal as an aperitif with fresh cheeses.
