ORIGIN
The winery's vineyards are trained using the spurred cordon system on medium-textured, clayey, sandy and calcareous soils in the countryside of Narcao, in the Lower Sulcis area.
PROCESSING
Manual harvesting of the grapes, which once arrived in the cellar are subjected to destemming-crushing and left to macerate and ferment with the skins, at a temperature of about 28° C, with frequent pumping over. Malolactic fermentation follows, which gives greater softness to the wine, and evolution in French oak barriques for fifteen months.
CHARACTERISTICS
Colour: intense ruby red.
Aroma: intense fruity aroma with a licorice finish.
Taste: full-bodied with saline notes and softness with fruity sensations and aromas of caper, rosemary and pepper.
COMBINATIONS
Montessi is a red wine that can be drunk throughout the meal. Starting from the aperitif, together with focaccia and puff pastry canapés. Perfect with grilled red meats and medium-aged cheeses, even with tasty first courses, such as those based on game.
