This wine was born as an experiment, certainly successful in 1997, from a blend of native grape varieties with a small part of Syrah. Assajé in Gallurese dialect means "it's already something".

ORIGIN
Sapling vineyards owned by the Ragnedda family, trained with spurred cordon in Sulcis and Gallura, at a height between 20 and 100 meters above sea level.
PROCESSING
The grapes harvested between the end of September and the beginning of October are destemmed and subsequently subjected to soft pressing. This is followed by fermentation and maceration in steel tanks for approximately 3 weeks. Refines in steel and concrete tanks. It is left to rest for 12 months in French oak barriques. It is exceptional if left to age for 4-5 years in the cellar.
CHARACTERISTICS
Color: intense red with purple reflections
Perfume: fusion of ethereal and vinous notes, where black fruits, cherries in alcohol, blackberry, myrtle, spices, eucalyptus, cocoa and salty notes can be felt at times
Taste: full, warm, savory, with rich and concentrated ripe fruit and fine tannic texture; the finish is long and persistent.
COMBINATIONS
Ideal to accompany first courses with meat sauce, but also stewed, roasted and grilled red meat. Also perfect with game and mature cheeses.
