Jù is the Sardinian name for the yoke of oxen that crossed the vineyards to open the land and make it fertile, ready to welcome the vine.

PROCESSING
The destemming and pressing is followed by maceration for approximately 12-14 days at a temperature of 26-28°C. Upon racking, the wine is decanted into vitrified concrete tanks where malolactic fermentation takes place and then transferred to new barriques where it ages for 24 months. Subsequently, the wine is bottled and left to rest for another 6 months in a horizontal position before being available for sale.
CHARACTERISTICS
Color: intense bright ruby red, tending towards garnet with aging.
Perfume: intense, deep and structured. Thick hints of ripe cherry, spices and balsamic notes of Mediterranean scrub are recognisable.
Taste: generous and elegant body, aromas of ripe red fruit and liquorice emerge, accompanied by sweet spiciness and refined tannins.
COMBINATIONS
Ideal wine for red meats and mature cheeses.
