Traditional sapling and low espalier vineyards, located in Uras and Terralba.
PROCESSING
After crushing-destemming, maceration follows at a controlled temperature, with the addition of selected yeasts, which lasts from 8 to 10 days. Once this phase is completed, fermentation continues in stainless steel vats at a controlled temperature of around 22/24°. We proceed with light clarifications, then leaving the wine to rest for a few days. The refinement continues for approximately 4 months in an underground concrete tank and then continues in thousand liter barrels for approximately 2 years and again for two months in stainless steel. Subsequently the wine will be bottled to complete the refinement in approximately 3/4 months.
CHARACTERISTICS
Color: between ruby red and garnet.
Nose: fruit and spices alternate, also highlighting touches of rose petals.
Taste: there is a decisive sip, aided by a powerful tannin, in the integration phase.
COMBINATIONS
Throughout the meal, it pairs perfectly with feathered game, roasted meats, braised meats and mature cheeses.
