GRAPE VARIETY Bovale

ORIGIN
Vineyards located right near the cellar, trained in counter-espalier with spurred cordon and Guyot pruning, on calcareous soils, rich in clay.
PROCESSING
The harvested grapes are subjected to destemming and crushing, followed by fermentation in steel at a controlled temperature of 22°C and maceration for 5 days, with soft pressing. Refines in steel for 6 months.
CHARACTERISTICS
Colour: bright, clear ruby red.
Nose: beautiful intensity, memories of wild cherries and blackberries, which then leave room for notes of Mediterranean scrub.
Taste: great freshness, sip characterized by intriguing iodine notes.
COMBINATIONS
Excellent as an aperitif with a plate of typical cured meats, to try with the typical 'cordula' stewed with olives. It pairs perfectly with red meat dishes but also with important first courses.
