The “Componidori” takes its name from the Knight who drove an ancient equestrian tournament of the Oristano tradition. The king of Sartiglia, the one who commands the race to the star and guides the other knights in trying their luck after him.

Sapling vines rooted on sandy soil in Sinis, in the lower Tirso Valley.
PROCESSING
Soft pressing and alcoholic fermentation in steel at a controlled temperature. Aging for 5 years in small oak and chestnut barrels, filled only partially to allow the development of the flor yeasts, a thin layer of yeasts that guarantees very slow oxidation of the wine, giving very complex tertiary aromas to the Vernaccia bouquet.
CHARACTERISTICS
Color: intense golden yellow with red and amber reflections.
Fragrance: Rich, intense, smells of toasted cereals, dried fruit, honey, resin, candied citrus fruits, aromatic herbs and pleasant marine and brackish nuances.
Taste: Dry, dry, fresh and incisive, with warmth, softness and a long marine and citrusy persistence.
COMBINATIONS
Excellent paired with blue and mature cheeses, but also with smoked fish appetizers or a mushroom risotto.
