GRAPES Cannonau
GRADATION 15%
ORIGIN
Vineyards owned by the winery, located in the hilly area of Dorgali at 450 meters above sea level, trained using saplings and spurred cordon.
PROCESSING
The harvest begins with destemming and crushing, followed by maceration of the pomace in the must in truncated cone wooden barrels for 20 days. Once the fermentation has also been completed, we proceed with the malolactic fermentation in oak tonneaux. Maturation follows, always in tonneaux for approximately 12 months in large oak barrels for another 12 months; bottle refinement completes the circle.
CHARACTERISTICS
Color: ruby red speckled with garnet reflections
Perfume: hints of ripe red fruit, such as blueberries and plums, intense spices such as nutmeg and clove.
Taste: In the mouth it is warm and full-bodied, with great softness, balance and persistence.
COMBINATIONS
To be tried with the great traditional Sardinian meat dishes, such as stewed lamb or wild boar with cannonau.
