The Cannonau di Sardegna Nepente di Oliena is a DOC red wine which, to be defined as such, must be produced from Cannonau grapes grown in the municipality of Oliena.

Vineyards owned by the winery, the oldest of the company, over thirty years old, trained as saplings on the slopes of Monte Corrasi, on granite weathering soils.
PROCESSING
After manual harvesting, in the first ten days of October, the bunches are carefully selected and subjected to destemming and crushing. The must is left in contact with the pomace for approximately fifteen days at a temperature of approximately 25° C, with frequent pumping over and delestage, in order to ensure optimal extraction of the polyphenolic components of the grapes. Corrasi is first matured in refrigerated concrete tanks and then spent at least 6 months in large Slavonian oak barrels and French oak barriques, with frequent batonnage on the fine lees.
CHARACTERISTICS
Color: lively red with garnet purple reflections.
Perfume: rich and complex. The notes of red pulp fruit give way to sweet and vanilla notes. The spiciness is reminiscent of the Mediterranean scrub.
Taste: decisive, the subtle acid vein leaves room for pleasant velvety and full-bodied sensations. Strong gustatory impact that shows no signs of diminishing even after moments of waiting.
COMBINATIONS
It goes very well with dishes with intense and decisive flavours. First courses expertly seasoned with game sauces, ravioli filled with the flavors of aromatic herbs, roasts and mature cheeses are excellent tasting companions.
