ALCOHOL CONTENT 14.5%
ORIGIN
Estate vineyards, espalier trained, guyot pruned, on medium-textured granitic breakdown soil, tending to sandy, in the Arzachena area.
PRODUCTION PROCESS
Made from the same grapes destined for Sciala but harvested late. The must remains in contact with the skins for 12/24 hours at a temperature below 10 degrees. Fermentation takes place half in large untoasted French oak barrels and half in steel and concrete tanks. The blend ages in the presence of its own yeasts in steel and concrete tanks for 6 months. Finally, it rests in the bottle for at least 9 months.
CHARACTERISTICS
Color: straw yellow with golden reflections.
Aroma: intense bouquet with notes of ripe fruit and Mediterranean scrub.
Taste: soft, long, full and persistent, with fruity hints, mineral and tertiary notes.
PAIRINGS
Montidimola is an excellent white wine with seafood cuisine, but it is also perfect with delicate white meat dishes, risottos and first courses based on aromatic ingredients such as mushrooms and truffles.
