If you are looking for an elegant, local sweet wine, Bisai is the passito that will win you over with its balanced natural sweetness. Produced from autochthonous white grapes harvested late in the second decade of October from the "Is Crabilis" locality in the Ussana countryside, from bush-trained vineyards at 200 meters on calcareous-clay soils, this passito is made from overripe grapes with 36 hours of maceration on the skins. The result is an intense golden color with intense and persistent aromas of dried apricot, wildflower honey and Mediterranean scrub, with a sweet and well-balanced taste with natural freshness due to overripening.
