Vineyards surrounding the winery, grown on calcareous-clayey soils, medium hill, Dolianova.
PROCESSING
Manual harvest of the grapes, in the cellar after a static decantation of the must obtained with a soft pressing of the grapes, the clean part is sent to fermentation conducted by selected yeasts at a temperature of 15°C for about 15 days. Aging on the noble lees and bottling in the spring following the harvest.
CHARACTERISTICS
Color: light straw yellow with greenish reflections.
Aroma: fresh and delicately fruity.
Taste: delicate, with a pleasant acidic expression.
COMBINATIONS
Perlas is a white wine perfect when paired with shellfish, appetizers and fish-based first courses, as long as they are not covered with strong condiments.
