Selection of the best Vermentino grapes from the most suitable vineyards in the Surrau valley, Arzachena.
PROCESSING
It comes from the same grapes intended for Sciala, harvested however late. The must remains in contact with the skins for 12/24 hours at a temperature below 10 degrees. Fermentation takes place half in large untoasted French oak barrels and half in steel and concrete tanks. The assembly evolves in the presence of its own yeasts in steel and concrete tanks for 6 months. Finally it rests in the bottle for at least 9 months.
CHARACTERISTICS
Color: straw yellow with golden reflections.
Perfume: intense bouquet with notes of ripe fruit and Mediterranean scrub.
Taste: soft, long, broad and persistent, with fruity hints, mineral and tertiary notes.
COMBINATIONS
Ideal in combination with seafood cuisine, but also with fish soups, blue and medium-aged cheeses.
