ORIGIN
Vineyards owned by the winery, located in the hilly area of Dorgali at 450 meters above sea level, trained using saplings and spurred cordon.
PROCESSING
The harvest begins with destemming and crushing of the bunches and fermentation of the must with the pomace, left to macerate in wooden conical vats at a maximum temperature of 28° C, for a period of 15 days. Once finished, it matures in fine French oak barriques, with toasting for 14 months. Refinement in the bottle follows, before being put on the market.
CHARACTERISTICS
Color: Intense ruby, with a purple edge
Nose: Intense, fresh and fragrant, notes of ripe red fruit and spices.
Taste: dry and full-bodied, tannins balanced with fresh acidity. Very persistent and clean finish.
COMBINATIONS
Ideal accompaniment to Sardinian regional cuisine; first courses with tasty seasonings, grilled and roasted meats, mature cheeses.
