Judikes Vernaccia di Oristano Riserva 2008

Judikes is the Vernaccia di Oristano DOC Riserva, certainly the most exclusive and emblematic product produced by Cantina del Rimedio. The name Judikes is configured as a tribute to the Sardinian judges and giudicati, referring to the institutions and figures who took the reins of the Sardinian administrative systems after the gradual disappearance of Byzantine rule in the 8th century. This tribute extends until the arrival of the Aragonese, testifying to a deep bond with the history and tradition of this fascinating region.

ALCOHOL CONTENT 17.5%

ORIGIN

Alluvial soils, with a sandy loam mix. The centuries-long flow of the Tirso River has given rise to these naturally fertile soils, drained by the presence of sand. The soils of the Tirso Valley, thus characterized, are called “Bennaxi”.

PROCESSING

The grapes are hand-picked and vinified in white with flor yeasts and alcoholic fermentation in cement tanks, without controlling the temperature. After about six months the wine obtained is transferred to oak and chestnut barrels left full, so that the 'film' of flor yeasts can form. The wine remains like this for over fifteen years, improving over time the structure, the alcohol content, the softness and the complexity of its perfumes and aromas.

CHARACTERISTICS

Color: golden yellow with amber reflections.
Aroma: intense and elegant, with liquorice and chestnut honey, quince, nutmeg and saffron. Hints of nuts.
Taste: dry, soft and enveloping. Its alcohol content is moderated by freshness and flavor. A sip of very long persistence.

COMBINATIONS

Judikes is an excellent meditation wine, to enhance moments of relaxation. Perfect at the table if accompanied with typical sweets such as amaretti or mostaccioli, but also with blue cheeses.
