The Marinostru Red Tuna Heart from Alice Surgelati follows a preparation process very similar to that of bottarga.
It is obtained by processing the tuna heart with sea salt and drying with natural ventilation.
Tuna Heart is excellent when thinly sliced, dressed with extra virgin olive oil and a few drops of lemon. It's ideal with a lightly dressed salad and bread.
Ingredients: Sardinian bluefin tuna (Thunnus thynnus) roe and salt. Caught in FAO Area 37.1.3.
