PROCESSING
Manual harvesting of intact grapes, bunch sorting, soft destemming, berry sorting, fermentation and maceration in steel for approximately 15 days at a temperature of 24°C. In steel for 12 months with a month of stirring on the fine lees. Bottle refinement for 6 months.
CHARACTERISTICS
Color: Intense ruby red with purple reflections.
Nose: Rich, with well-defined red fruits especially blackberry and cherry and hints of spicy notes.
Taste: Remarkable acidity that supports the alcohol content; fruity drink with notes of cherry and blackberry, tobacco and black pepper in the finish.
COMBINATIONS
Excellent paired with a platter of cured meats and mature cheeses, but also with red meats and game.
