ORIGIN
Vineyards of about 15 years old, trained with spurred cordon and organic management. Territory from granite disintegration surrounding the Winery, Oliena.
PROCESSING
The grapes are harvested early in order to have higher acidity and lower sugar yield. Once fermentation is complete, the wine is sent to the secondary fermentation in an autoclave, at a controlled temperature, thanks to a peduncle made up of yeasts suitable for withstanding the pressure that develops in this phase.
CHARACTERISTICS
Color: Intense cherry pink, with light pink hues.
Aroma: floral notes of rose and fruity notes of cherry.
Taste: remarkable freshness, well balanced.
COMBINATIONS
Baloi is a sparkling wine that is excellent as an aperitif, but it also pairs well with appetizers and first courses of meat, and fatty but delicate fish. Our advice is to taste it with fried vegetables or try it with a platter of typical cured meats.
