PROCESSING
The grapes are subjected to destemming and crushing and the must is left to ferment with the pomace in stainless steel containers for fifteen days; after racking, fermentation continues, again in steel. Once fermentation is completed, Is Arenas matures in Alliers oak barriques for ten months, a period during which malolactic fermentation also takes place; This phase is followed by refinement in the bottle for six months.
CHARACTERISTICS
Color: intense and impenetrable ruby red, tinged with warm garnet reflections.
Perfume: sensations of fruit such as plum, berries, undergrowth and spicy nuances of vanilla.
Taste: structured and smooth, soft, good flavor, freshness and elegant tannins.
COMBINATIONS
An excellent structured aperitif, to be accompanied by flakes of Pecorino Sardo. At the table it accompanies important first courses, perhaps with full-bodied sauces.
