Cannonau Nepente di Oliena is a DOC red wine which, to be defined as such, must be produced from Cannonau grapes grown in the municipality from Oliena.

ORIGIN
Vineyards of about 15 years old, trained with spurred cordon in organic management, on granite disintegration soils, at the foot of Monte Corrasi (NU).
PROCESSING
The vinification process first involves fermentation at a controlled temperature, in order to preserve the typical aromas of the Cannonau variety. This is followed by refinement in 500-liter tonneaux for 12 months, then in the bottle for another 3 months.
CHARACTERISTICS
Color: garnet red with purple reflections.
Aroma: it stands out for intense fruity notes of morello cherries and plums, spicy, woody and floral.
Taste: dry, warm and soft wine, rightly tannic, overall well balanced.
COMBINATIONS
Carros is a red wine ideal with grilled meats, game and strong, spicy cheeses.
