The “Componidori” takes its name from the Knight who led an ancient equestrian joust of the Oristano tradition. The king of the Sartiglia, the one who commands the race to the star and guides the other knights in trying their luck after him.

Bush vines rooted in sandy soil in Sinis, in the lower Tirso Valley.
PROCESSING
Soft pressing and alcoholic fermentation in steel at a controlled temperature. Aged for 5 years in small oak and chestnut barrels, filled only partially to allow the development of flor yeasts, a thin layer of yeasts that guarantees a very slow oxidation of the wine, giving very complex tertiary aromas to the bouquet of Vernaccia.
CHARACTERISTICS
Color: intense golden yellow with red and amber reflections.
Aroma: Rich, intense, with hints of toasted cereals, dried fruit, honey, resin, candied citrus fruits, aromatic herbs and pleasant marine and salty nuances.
Taste: Dry, crisp, fresh and incisive, with warmth, softness and a long marine and citrus persistence.
COMBINATIONS
Componidori is an excellent wine when paired with blue and mature cheeses, but also with smoked fish appetizers or mushroom risotto.
