ORIGIN
Old single vineyard, trained as a small tree, located on clayey soils rich in sand, with a good limestone fraction, Sinis peninsula (OR).
PROCESSING
Manual harvest, the grapes are subjected to destemming and crushing. The must is left to macerate in contact with the skins for fifteen days, then softly pressed. It is then matured in first and second passage French oak tonneaux for about twelve months, and finally refined in the bottle for six months.
CHARACTERISTICS
Color: ruby red with garnet reflections.
Aroma: intense, with hints of red fruits, balsamic notes and spices.
Taste: on the palate it is soft, warm and balanced by round tannins and a decisive freshness.
COMBINATIONS
I Giganti Rosso is a structured red wine, which requires pairing with intense and persistent dishes. To be tried, with first and second courses based on lamb, wild boar and game in general. Also excellent with braised meats, grilled red meats and mature cheeses.
