If you are looking for a Sardinian red wine with a strong character and complex aromatic profile, Susu is the Cannonau di Sardegna DOC from Bentu Luna that will win you over with its spicy personality and depth.
Produced by the Bentu Luna winery in the heart of Sardinia, Susu is made from 100% Cannonau grapes from a vineyard on sandy-loam soils in the municipality of Neoneli, in Mandrolisai. A small and selected production of only 1,500 bottles, which guarantees care and attention at every stage.
The vinification follows the same artisanal philosophy of the winery: after careful destemming, fermentation begins with spontaneous pied de cuve in 20 hl concrete vats, with whole berries and clusters fermenting for about 3 weeks, with light manual punch-downs in the final phase. This is followed by an 8-month aging in second-pass oak barriques, during which malolactic fermentation occurs and light bâtonnage integrates and rounds out the wine.
In the glass, Susu reveals an intense ruby red color, a spicy bouquet, with notes of pepper as well as dark ripe fruit, for a warm, full sip with an unmistakably Sardinian character.
