Located in the municipality of Oliena at 600 meters above sea level
PROCESSING
The grapes, upon delivery to the cellar, are immediately subjected to the soft pressing process, preventing the must from becoming enriched with coloring substances contained in the skins. The juice, after being cooled and clarified, ferments at low temperature for approximately 10-12 days. After the first rackings, we proceed with the refinement phase in stainless steel tanks with repeated batonnage on the finest lees in order to increase the structure and body of the wine.
CHARACTERISTICS
Color: bright straw yellow.
Perfume: delicate floral aroma reminiscent of yellow wildflowers, almond trees and roses.
Taste: balanced acidic freshness and a pleasant bitter aftertaste accompanied by a light residue of carbon dioxide which increases the sensations of flavor and minerality.
COMBINATIONS
Excellent as an aperitif but versatile in accompanying fish-based dishes typical of Mediterranean cuisine throughout the meal. Delicate in combination with ricotta, sweet and soft cheeses.
