GRAPES Vermentino

ORIGIN
The vineyards are located between Sanluri and Lunamatrona, on clayey soils with the presence of limestone.
PROCESSING
The grapes are harvested manually in the first days of September. After destemming and crushing, the grapes are softly pressed, with decanting of the must. Fermentation at a controlled temperature of 16 °C in steel and 70% in tonneaux. Maturation in steel and wood for at least 6 months on its yeasts, with periodic bâtonnage.
CHARACTERISTICS
Color: Deep straw yellow with golden reflections.
Aroma: Intense and complex, beautiful notes of yellow flowers such as chamomile, ripe fruit, mineral, closes with spicy notes.
Taste: Great structure and softness, a wine with good longevity and depth.
COMBINATIONS
Su'Orma is a structured white wine, which at the table prefers pairings with dishes with slightly more decisive and complex flavors. To be paired, for example, with a baked scorpion fish seasoned with cherry tomatoes, potatoes and Taggiasca olives.
