GRAPES Vermentino
ALCOHOL CONTENT 13.5%
ORIGIN
Vineyards grown on espalier on the hills around Mogoro, on soils with a good presence of limestone.
PROCESSING
The grapes are harvested manually at the perfect level of ripeness. Once in the cellar they are subjected to soft pressing, in order to obtain an excellent free-run must. After a brief pellicular maceration, the vinification takes place in steel thanks to selected yeasts, in the total absence of oxygen and always at a controlled temperature.
CHARACTERISTICS
Color: straw yellow with greenish reflections.
Perfume: fresh and fine, floral notes of elderberry, pulpy fruit
white, hints of aromatic herbs.
Taste: fresh, soft and savoury on the finish.
COMBINATIONS
Don Giovanni is a perfect Vermentino to drink as an aperitif. Try it at the table with fish dishes.
