Vineyards located near the winery in Sorso (SS).
PROCESSING
The medium Charmat is applied as a sparkling winemaking method. The winemaking takes place via whole bunch pressing with cold static sedimentation. It ferments in reduction, at a controlled temperature of 12°C. The secondary fermentation is very slow with the inoculation of selected yeasts. Refines in an autoclave, in contact with the stirring yeast for 45 days.
CHARACTERISTICS
Color: Peach Blossom Pink. Very fine and persistent perlage in the glass.
Perfume: Delicate and fresh floral and fruity sensations expressed in notes of strawberry and currant, suffused with a light minerality.
Taste: creamy and persistent, fresh and saline, with subtle carbonic pungency that evokes fresh ginger.
COMBINATIONS
Perfect sparkling wine as an aperitif, to accompany cured meats such as bacon, creamy and delicate cheeses. Suitable for dishes such as fried courgette flowers, fried prawns, lightly seasoned pizza, ravioli with delicate fillings.
